Culinary uses, preparation and storage: Its delicate flavour allows it to be used in a wide variety of dishes without ever overwhelming the palate: ► Raw uses: Its exceptional sweetness makes it ideal for eating raw. Finely sliced, it enhances tomato salads, ceviches, tartares or warm potato salads. ► Glazed garnishes: Whole or cut into quarters, small white onions lend themselves beautifully to white or brown glazing to accompany white meat dishes (veal, poultry). ► Confit and pickles: Its flesh absorbs sweet-and-sour flavours perfectly. It is excellent marinated in rice or cider vinegar to add depth to your dishes. ► Preparation: Remove the thin skin and the outer layers if necessary.
