The pearl onion is a small bulb highly prized in the catering industry for its neat appearance and mild, aromatic flavour. Delas selects these small onions for their consistent size, ensuring they cook perfectly evenly. Once cooked, their flesh becomes melt-in-the-mouth and develops natural sugars that are very pleasant on the palate.
Professional uses, preparation and storage:
► Traditional garnishes: Essential when glazed white or brown to accompany beef bourguignon, coq au vin or classic veal blanquettes.
► Pickles: Lends itself remarkably well to making pickles in vinegar and herbs to add a zing to charcuterie platters and terrines.
► Preparation: To make the often tedious task of peeling small quantities easier, blanch the pearl onions for a few seconds in boiling water before peeling them.
► Storage: Store in a cool, dry place away from light to prevent sprouting.
