Recognisable by its pale, thin skin, it offers white, juicy flesh of great tenderness. Unlike the classic yellow onion, its flavour is subtle and does not overpower other ingredients, making it a valuable ally in gourmet and bistronomic cuisine. Available to order by the kilo from our Fruit & Vegetables, it is graded to ensure consistent sizing and quality all year round. Culinary uses, preparation and storage: Its versatility allows it to be used in a wide range of culinary applications, from fresh to gourmet: ► Raw uses: Its exceptional mildness means it can be eaten raw without excessive pungency. Finely sliced with a mandoline, it enhances heirloom tomato salads, beef carpaccio or fish tartare. ► Jams and chutneys: Thanks to its natural sugars, it caramelises beautifully. It is the ideal base for making homemade onion confit to accompany foie gras or to top gourmet burgers. ► Gentle Cooking: Roasted whole in the oven with a drizzle of olive oil, or simply pan-fried at a low temperature, it becomes melt-in-the-mouth and translucent, adding an incomparable richness to your vegetable side dishes. ► Preparation: Easy to peel thanks to its thin skin.
