This frozen purée, selected by Le Delas, is the result of a meticulous blend of Willamette and Mecker raspberries. Whilst the Willamette variety contributes its structure and characteristic acidity, the Mecker variety is renowned for its firm flesh and exceptionally intense aroma. Harvested at peak ripeness, the fruit is processed without any added sugar. The systematic removal of the seeds ensures a perfectly smooth texture, eliminating any bitterness to provide a base of exceptional purity. With a Brix level of 10.5, this product faithfully recreates the vibrancy and ruby colour of the fresh berry.
Professional uses, preparation and storage:
► Pastry and confectionery: Its delicacy and lack of added sugar make it the ideal choice for ganaches, mousses or fillings. It allows you to precisely control the flavour balance of your creations.
► Sorbets and ice cream: Thanks to the Mecker-Willamette blend, you can create ‘full-fruit' sorbets with a punchy flavour and vibrant colour, without the inconvenience of seeds.
► Mixology and snacking: A must-have for signature cocktails or for topping dairy-based desserts, this purée offers exceptional length on the palate, a hallmark of the quality selected by Le Delas.
► Preparation: For optimal flavour release, shake the container well before use to ensure the pulp is evenly distributed.
► Storage: Keeps for 15 months at +2°C to +6°C before opening. Once opened, store in the fridge and consume within 12 days. In accordance with Le Delas standards, ensure the cold chain is strictly maintained.

It sources exceptional, rare and exclusive fruits, picked at peak ripeness and gently processed shortly after harvesting. It supports the gastronomic community with its creations and innovations. Certified B Corp, one of the most stringent social and environmental labels, Ponthier will switch to using French-sourced beet sugar in June 2024 to reduce its carbon footprint. Ponthier coulis and purées are made from fruit sourced from carefully selected varieties, harvested according to their stage of ripeness, with no colourings or preservatives. Both fresh and frozen purées are used in desserts, ice creams or sorbets, jams, fruit jellies, coulis, glazes, as well as in cocktails, smoothies, milkshakes and slushies... The coulis, whether fresh or frozen, can be used to decorate plates, alongside cakes, on ice cream, mixed with yoghurt, or in fruit salads. These fruit bases are ideal for cooking, laboratory work and, of course, baking. Their resealable packaging allows for easy portioning and optimal protection against bacteria.
