Culinary uses:
Perfect for pastry creations, fruit desserts and artisanal frozen desserts. Ideally blends with mousses, bavarians and pastry creams to bring a natural fruity note. Ideal for sorbets, fruit coulis and fruit tart fillings. Harmonizes perfectly with chocolate preparations, vanilla creams or autumn fruit compositions and sweet spices like cinnamon.
Storage and preparation advice:

These concentrated preparations are obtained by evaporating part of the water contained in the fruits, under vacuum, at low temperature. We then add just the right amount of essential oil (natural extract of fruit peel) to enrich the aromatic notes and in particular the citrus zest note. In the end, a product rich in taste and dry matter for various applications. Result: a unique fruitiness and a particularly sought-after dry matter content for certain recipes (for example, 1 kg of concentrated orange preparation is prepared with 16 kg of oranges). These preparations offer great ease of use thanks to constant quality, a homogeneous product, practical and suitable packaging. The recipe for this product has been guaranteed gluten-free by its producer (no cross-contamination not guaranteed).
The production process guarantees a constant sugar content and acidity, while preserving an organoleptic richness as close as possible to the fresh fruit. This puree is preservative-free and without artificial colouring or aroma, obtained from fresh PGI fruits picked at maturity whose juice is extracted by pressing and refining. A practical container packaging, which allows to unmould, portioning or pour the puree easily. Recommended thawing for optimal quality: between +2°C and +4°C for 24 to 48 hours. Possibility of defrosting in a double boiler or microwave at a moderate temperature..
