This concentrated frozen orange preparation is a premium technical ingredient, made from fruit harvested at peak ripeness. The juice, extracted through pressing and refining, is gently concentrated and then enhanced with orange essential oil to ensure perfect aromatic intensity and consistent flavor year-round. With a Brix level of 58°, this pasteurized orange concentrate offers optimal density and a balanced sugar-to-acid ratio. Formulated without any allergens, it meets the demands of modern kitchens and is perfectly suited for vegetarian and vegan diets, as well as for people with celiac disease.
Professional uses, preparation, and storage:
► Culinary applications: Thanks to its high concentration, this product is an indispensable ally for pastry chefs, chocolatiers, caterers, and bartenders. In fine pastry making, it is ideal for intensely flavoring cake batters, cakes, cream fillings, and chocolate ganaches, or for creating mirror glazes with impeccable hold. In cooking, it excels at creating bold sauces, glazes, and reductions to accompany white meats and duck, or to add depth to a deglazing vinegar. Caterers and mixologists will find it particularly useful as an ultra-fragrant base for creating full-fruit sorbets, mousses, and smoothies, as well as for crafting signature cocktails and mocktails.
► Preparation: To preserve all of the citrus fruit's organoleptic qualities, it is recommended to thaw the product in its unopened original packaging in a positive-temperature cold room between +2°C and +4°C for approximately 24 hours. To ensure the product is perfectly homogeneous before use, it is advisable to thaw the entire 500 g tray and mix it thoroughly.
► Storage: This product is frozen. Before opening, it must be stored in a freezer at a temperature of -18°C or lower. After thawing completely in its unopened packaging, the product can be refrigerated at temperatures between +2°C and +4°C for up to 15 days, offering excellent flexibility for your daily meal planning. Defrosting recommended for optimum quality: between +2°C and +4°C for 24 to 48 hours. Possibility of thawing in a bain-marie or microwave at moderate temperature.
