Professional uses, preparation and storage:
► Culinary applications: Thanks to their size 4, these oysters are ideal for classic seafood platters, oyster bars or ‘oyster bar' events at receptions. Their delicate flavour also lends itself to creative culinary uses: served as an appetiser with a squeeze of lime, set in a sea water jelly, or presented as a ‘seaside shot' with a seaweed tartare.
► Preparation: To ensure safety and customer satisfaction, the oysters must be shucked using a suitable oyster knife, ideally shortly before serving. It is recommended to drain the initial opening water to allow the oyster to secrete a second, clearer and more flavourful liquid. Present them on a bed of crushed ice or coarse salt for optimal stability and freshness at the table.
► Storage: A live product that must be stored between +5°C and +10°C, away from light. It is essential to keep the oysters flat, with the shells closed (convex side down), so that they retain their intertidal water, which ensures their survival and freshness.
