Professional uses, preparation and storage:
► Gastronomic applications: This large-sized fish is particularly suited to whole cooking, allowing all the moisture and juices of the fish to be preserved. It is ideal for preparation in a salt crust, a technique that enhances its delicacy whilst providing a spectacular presentation in the dining room. The fillets of this wild sea bass are thick enough to be cut into large steaks, roasted skin-side down or poached at a low temperature. Its head and bones, of excellent quality, provide a superb base for full-bodied stocks or seafood reductions.
► Preparation: For a product of this calibre, opt for cooking methods that preserve the integrity of the flesh. Precise cooking, ideally through to the centre, brings out the fish's pearly texture. It pairs perfectly with spring vegetables, citrus emulsions or lightly lemony brown butter.
