This 1 to 2 kg farmed sea bass is selected and prepared daily by our fishmongers at Le Delas Tide workshop in Rungis, guaranteeing optimal freshness and quality. Its firm, flavourful flesh holds up well when cooked and has a delicate taste, ideal for high-end dishes.
Culinary uses:
► Oven-baked or baked in a salt crust: preserves the firm, juicy flesh while concentrating the flavours.
