This premium fillet heart is cut from the finest part of Scottish farm-raised Atlantic salmon (Salmo salar). Cold-smoked in the traditional way, it is gently coated with honey and a natural truffle aroma, creating a subtle harmony between the smokiness of the fish and the earthy sweetness of the flavouring.
Boneless and uniform in texture, this 200 g piece is ready to slice and serve, ideal for refined plating and professional use. Carefully selected by Le Delas.
Slice thinly and serve cold as a starter or tasting plate, with baby greens, vegetable carpaccio, Jerusalem artichoke cream or warm blinis. Also suitable for tapas, canapés, or as a garnish in fine dining smoked fish creations.

Known at Delas in Rungis under the brand UFF, the ATELIER SÖ house has been skillfully transforming smoked salmon for over 30 years. Very demanding in terms of selection of its raw materials (Salmo Salar) and manufacturing quality, its experience meets the expectations of restaurant and catering professionals. The fish are filleted and salted with dry salt by hand, in order to ideally preserve the firmness of their flesh.
