For 45 years, Maison Le Borvo, a family business founded by a former Michelin-starred chef, has been the gastronomic benchmark for smoked salmon. The salmon (Salmor Salar) from Norway and Scotland is carefully selected. The dry salting process is light and subtle to preserve the delicacy of the fish. Similarly, cold smoking with beech sawdust enriches the fish with subtle notes and serves only to enhance the unique flavour of salmonids.
