This albacore tuna, traditionally fished in the Atlantic or Indo-Pacific, is smoked by hand using a secret process. Presented as a lomo, it can be sliced thinly or diced, and combined with your piperades, salads, sandwiches, fried eggs... It's a great alternative to cured meats, delicious with Basque guindilla peppers.
This smoking workshop in the Hossegor region processes the finest fish, using only Guérande salt and beechwood.
The Angresse workshop supplies salmon reared in the waters of the Orkney and Shetland Islands in Scotland and on a farm in Western Ireland at a particularly low density. Their diet is balanced, GMO-free, with a marine component from certified sustainable wild stocks and biological pest control. To bring out the very best, our teams have developed a special smoking and maturing technique, combining age-old traditions with the quest for perfection. It involves a rigorous selection of fish and ingredients (Guérande salt and beechwood), manual work without freezing from one end of the process to the other, and smoking and maturing according to an exclusive recipe, giving the fish time to reveal all its flavours.
