This French Baeri caviar from Caviar Perle Noire comes from the Acipenser baerii sturgeon, raised in pristine spring waters in the Périgord region. Its medium-sized grains, ranging from dark brown to anthracite, offer a tender texture and refined flavors with buttery and lightly briny notes. A well-balanced caviar, selected by Ledelas for discerning culinary professionals.

This Caviar from Les Eyzies de Tayac, in the Natura 2000 zone, is exceptional both for the environment of its breeding and for the quality of its production. The species Acipenser Baerii and Acipenser Gueldenstaedtii (Oscietra) were introduced there on an old fish farm with open circuit ponds fed by small streams. Its clear, limestone water, of the first fish category, and rich in minerals, is perfect for avoiding the sometimes earthy flavors of caviar. The freshness of the water allows the sturgeons to mature slowly, for optimal meat and egg quality. The fish are raised at low density with a diet without GMOs, Brazilian soy (deforestation), or antibiotics... It only contains fish meal from responsible fishing and European cereals. This natural heritage and French know-how give Caviar Perle Noire its taste personalities, combining subtlety, strength and length in the mouth.
