René WEBER & Fils has been a family business since 1952, combining modernity and tradition in the production of sauerkraut. They grow Alsatian cabbage in Krautergersheimn, the sauerkraut capital. Grown on deep, silty soil, these cabbages benefit from Alsace's contrasting climate, which gives them exceptional quality. The fermentation process is carried out in vats, under the influence of salt and protected from the air, to produce a slightly acidic, highly digestible sauerkraut. The acidity of the sauerkraut varies with the season, from mild at the beginning of the season to more pronounced thereafter. The texture is fine and long, like angel hair, with a brilliant white colour and a much appreciated flavour. This exceptional company rinses the sauerkraut on demand, never in advance, to preserve its flavour and shelf life. It is proud to offer top-quality sauerkraut, produced using traditional know-how and a rigorous selection of raw materials.
