These Gendarmes are raw, smoked and pressed sausages made from pork and beef, and spices, particularly cumin. They are sold in packs of 10 pairs, or 20 gendarmes. This product is processed in Germany and is characterised by its firm texture, spicy flavour and medium to dark red colour. It is selected by Le Delas, a wholesaler in Rungis.
