After reaching the desired level of maturation, the fillets are prepared with a knife one by one, then delicately preserved in olive oil. This careful preparation allows us to obtain anchovies with firm flesh and intense flavor.
Conserves of the Bay of Biscay from species harvested at maturity and hand-packed for 5 generations.
For the last five generations, Las Ortiz Conservas, located in the Basque country, have been selecting and conditioning the most famous species of the gulf of Gascogne, anchovies and albacore tuna. Canned tuna fillets and ventresca are made with fish caught by line during the summer period in order to respect the integrity and maturity of the tuna. Manual packaging contributes to the same respect for the fish and ensures the final product a uniques firmness and taste.See all products in this range
