This is the softest and most delicate part of the white albacore tuna. The very fine fillets, which delight the most refined palates, are prepared by hand.
Conserves of the Bay of Biscay from species harvested at maturity and hand-packed for 5 generations.
For the last five generations, Las Ortiz Conservas, located in the Basque country, have been selecting and conditioning the most famous species of the gulf of Gascogne, anchovies and albacore tuna. Canned tuna fillets and ventresca are made with fish caught by line during the summer period in order to respect the integrity and maturity of the tuna.
