The exquisite taste of white albacore tuna is enhanced by olive oil which gives it all its softness. Like wine, cheese or ham, it is possible to create a cellar of canned white albacore tuna that will see their quality and flavor improve over time. This pretty box containing around 80 g of drained fish can be resold as is, presented in a basket filled with food or even served in a restaurant, accompanied by fresh bread, for an authentic and original starter or tapas. Line-caught using an ancestral technique, white albacore tuna, which are characterized by their small size and clear flesh, are prepared in olive oil. Their flavor and softness are incomparable. In addition, once canned, their delicate taste is refined over time.

For the last five generations, Las Ortiz Conservas, located in the Basque country, have been selecting and conditioning the most famous species of the gulf of Gascogne, anchovies and albacore tuna. Canned tuna fillets and ventresca are made with fish caught by line during the summer period in order to respect the integrity and maturity of the tuna.
