Traditional Italian pasta with fresh eggs
These exceptional pasta are made near Alba in the Piedmont region, from semolina of selected hard wheat and fresh eggs, mixed slowly at constant temperature. Passed to the rolling mill, the paste is left resting and then dried at 42-47°C in order to obtain a homogeneous product, resistant to cooking. After resting, the product is shaped and cut by a 12-hour cycle, then weighed and packed manually. Declined in all classical forms, these pasta cook in 3 minutes. The care in the choice of ingredients and the seriousness of the inspections during manufacture make this product a reference in its category.
