"Legendary" italian pasta, made with the fines wheat of Puglia, gently extruded in bronze molds and slowly dried.
Since the 1800s, the Cavalieri family has been growing excellent durum wheat in the Puglia region of southern Italy. Following the agricultural crisis in 1861, the family company turned to the foreign trade of wheat, then in 1918 to the manufacture of first choice pasta. It became a legend with incomparable crunchy pasta. Benedetto Cavialieri attaches great importance to the quality of its flour and to innovation, with the creation of modern machines for mixing, pressing and molding of pasta. The dough flourishes in the bronze molds, without being brutalized as in industry. Slow drying "Metodo Cirillo" at low temperature preserves the nutritional qualities of durum wheat and gives the pasta impeccable consistency on cooking.
