"Noir d'Olives" of Panisse is made according to a traditional Provencal recipe where the olives are stored to lightly ferment before the oil extraction process. The result gives a mild oil with a flavour similar to black table olives. Its bouquet reveals intense aromas of truffle, mushroom and coca. Cooking suggestions: drizzle some Château de Panisse to elevate ratatouille, grilled gambas, goat cheese, home made mashed potatoes, and dare trying it on stewed apples...

The Château de Panisse is located in the heart of Provence, land of olive trees and olive oil, privileged by its sun and its blue sky where the mistral blows. This location on 15 hectares around the 15th century castle, the varieties of olive trees and the ventilation of the plantation have allowed these olive oils "Fruité Vert" and "Noir d'Olives maturé" to obtain the AOC "Huile d'olive from Provence". Picholine, a monovarietal oil, is made 100% from the variety of Picholine olives from a neighboring orchard. "Fruité Vert" received the gold medal at the 10th National Olive Oil Competition of France in Appellation d'Origine 2013 and the 2018 silver medal at the Concours Général Agricole in Paris and New York. "Noir d'Olives maturé" won the gold medal at the Concours Général Agricole de Paris 2014 and in 2018, the gold medal in the AOC AOP oils competition in Nyons as well as a 3rd Épicure d'Or from the Grocery store.
