The Cuisses de Poulet shallot is a variety of shallot originating in France, belonging to category 1 (superior quality). The name Cuisses de Poulet refers to its shape, which is more elongated and bulbous than the long shallot. This shallot, selected by Le Delas, a wholesaler in Rungis, is appreciated for its milder and more delicate flavour than onions, as well as for its ability to hold up well when cooked.
