Fresh herbs | Bulbs | Shallots
The Cuisses de Poulet shallot is a variety of shallot originating in France, belonging to category 1 (superior quality). The name Cuisses de Poulet refers to its shape, which is more elongated and bulbous than the long shallot. This shallot, selected by Le Delas, a wholesaler in Rungis, is appreciated for its milder and more delicate flavour than onions, as well as for its ability to hold up well when cooked.
Culinary uses:
The Chicken Leg Shallot is suitable for a wide range of uses in both gourmet and traditional cuisine:
► Aromatic base: Essential for sauces (beurre blanc, red wine sauce, confit shallots), cooking stocks and broths.
► Finishing and seasoning: Finely chopped for vinaigrettes, marinades and tartares, where its subtle flavour is sought after.
► Cooking: Ideal braised or confit to accompany meats (especially beef and duck), or to enrich stuffings.
► Raw: Can be minced to garnish salads or cold dishes.
Storage and preparation tips:
► Storage: Fresh product. Store in a cool, dry place away from light (a pantry or well-ventilated area is ideal) to prevent sprouting.
► Preparation: Peel and chop or mince as needed. Use quickly after cutting to preserve flavour.
The long shallot is distinguished by its subtle aroma and a flavour that is less pronounced than that of the onion. Selected by Le Delas for the uniformity of its bulbs and its exceptionally delicate flesh, it is presented in a handy 250g pack. It is one of the most versatile and indispensable ingredients in French cuisine, providing an impeccable aromatic base.
Professional uses, preparation and storage:
► Reductions and Sauces: It is an essential base for wine sauces, Béarnaise or Beurre Blanc, where its delicate sweetness works wonders.
► Raw condiment: Finely chopped raw, it adds depth to vinaigrettes, oysters or beef and fish tartares.
► Preparation: Its dense texture allows for extremely precise chopping without crushing the flesh.
► Storage: Store in a cool, very dry and well-ventilated place, kept strictly away from light to prevent sprouting.
