The traditional long shallot, selected by Le Delas, is a premium ingredient in French cuisine, carefully cultivated on French soil. This size 24/40, grade 1, guarantees uniform bulbs that are easy to work with and possess a delicate, refined flavour. Unlike the onion, the long shallot offers a more subtle flavour, slightly sweet and less pungent, essential for creating the most delicate sauces and flavourful deglazures.
Professional uses, preparation and storage:
► Sauces and deglazings: It is the essential base for Béarnaise sauce, beurre blanc sauce or the reduction for a Bordelaise sauce. Its ability to melt without bitterness allows it to bind cooking juices with elegance.
► Cold dishes: Finely chopped (into ‘brunoise'), it adds a touch of acidity and a subtle kick to beef or fish tartares, or to distinctive vinaigrettes.
► Preparation: To preserve the full delicacy of its essential oils, it is advisable to chop it by hand rather than blend it in a food processor. Its elongated shape facilitates precise and even cutting, thereby minimising waste.
► Storage: A product suitable for long-term storage; must be kept in a dry, cool and well-ventilated place, away from direct light to prevent sprouting and maintain the firmness of the bulb.
