The Conference pear is a variety of pear recognisable by its elongated shape and green-brown skin, often covered with russeting. The Conference pear is highly prized for its fine, melt-in-the-mouth flesh, which is very juicy and sweet when ripe, as well as for its delicate fragrance. It is supplied to you by Delas in Rungis.
Culinary uses:
Conference pears are suitable for a variety of uses, either raw or cooked:
► Raw consumption: Ideal as a dessert fruit, as a snack or cut into pieces in fruit salads.
► Desserts: Perfect for tarts, crumbles, cakes, or simply poached in syrup or wine (poire Belle-Hélène). Their flesh remains firm after cooking.
► Savoury accompaniment: Excellent cooked or raw in thin slices, to accompany cheeses (especially blue cheese), foie gras, or in mixed salads.
► Juices and nectars: Used to make pear juice or nectar.
Storage and preparation tips:
► Storage: Fresh product. Store at room temperature to encourage ripening. Once ripe, store in a cool place (refrigerator) to extend their shelf life.
► Preparation: Wash before consumption. Consume with or without the skin. Peel for use in baking.
