Picked from clean, healthy shoots with a vibrant green colour, the leaves are carefully harvested, cut to a uniform size, washed and blanched before being frozen. Professional uses, preparation and storage: ► Gastronomic applications: An essential staple of Egyptian, Levantine and North African cuisines, molokhia is mainly cooked as a soup or a slow-cooked stew. It develops a characteristic silky texture that naturally thickens broths. It is traditionally paired beautifully with poached chicken, rabbit or lamb, strongly seasoned with ta'leya (a mixture of crushed garlic and dried coriander sautéed in clarified butter). For bistronomic or fusion cuisine, its unique velvety consistency lends itself to creating vegetable emulsions or original accompanying sauces for fish or white meats. ► Preparation: Ready to use straight from the pack without prior defrosting, the finely chopped molokhia saves valuable time during preparation. For a basic preparation, simply add it to a seasoned boiling stock and simmer for 5 minutes over a low heat.
