As recommended by the Spanish gallega way recipe, this octopus was frozen and therefore tender. Cook it about 45 minutes in a copper saucepan filled with salted boiling water, with some unpeeled potatoes. Once the octopus is cooked and tender, let it cool 20 minutes, cut it into strips to be placed on a large flat plate around the peeled potatoes. A stroke of olive oil, a few grains of sea salt, paprika and chilli, and you can serve it with a beer or a glass of red wine.

This octopus has been selected by Le Delas for its exceptional tenderness. Captured in Morocco, it is processed and packaged in Spain, of which it is a specialty! It is eaten in tapas, as a starter, or main dish cooked in the gallega (Galician). If you want to work your octopus yourself, it is recommended to freeze the fresh octopus at least a day to soften it, it is already done. Its baked version is ready to serve and prevents any loss.
