The production process guarantees a constant sugar content and acidity, while preserving an organoleptic richness as close as possible to the fresh fruit. This puree is preservative-free and without artificial colouring or aroma, obtained from fresh IGP fruits picked at maturity whose juice is extracted by pressing and refining. A practical container packaging, which allows to unmould, portioning or pour the puree easily. Recommended thawing for optimal quality: between +2°C and +4°C for 24 to 48 hours. Possibility of defrosting in a double boiler or microwave at a moderate temperature.. In pastry: entremets, entremets glacés, mousses de fruits, sorbets, glaces, verrines, gâteaux de voyage, bavarois, charlottes, tartes, desserts à l'assiette.... In confectionery: fruit pastes, ganaches, candies, fruit chocolates.... In cocktails: with or without alcohol, smoothies, long or short drinks…. In professional kitchens: as an accompaniment to fish, game, white meat, and also to compose original sauces…
