The frozen soufflé, an original, delicious, light and creamy dessert, 90% from France, to be enjoyed almost straight out of the freezer!
René Brulé started as pastry chef at the Four Seasons in Montreal. It was there that in 1977 he created the recipe for frozen soufflé, made from a mix of beaten cooked sugar and egg yolk then whipped cream. Visually, it is a soufflé that overflows from its poplar wood container. In the mouth, it is light as mousse and as fresh as ice cream. It can be enjoyed immediately after taking it out of the freezer. René Brulé then founded a catering company specializing in weddings which would be taken over by Maison Fauchon. Today it is his son, Pascal, who offers his famous frozen soufflé recipe to tables around the world. Responsibly, 90% of the ingredients in these desserts come from France. Namely: let's give back to Caesar what belongs to him, it was the French chef Alexis Soyer who invented the first frozen soufflé, called "refreshing" in 1847, adapting for the first time this usually hot dessert for summer.
