The dolphinfish fillet (Coryphaena hippurus), also known as Mahi-Mahi, is a product of choice for professionals. Its firm, delicate flesh and distinctive flavour make it an exceptional fish. These fillets are prepared in the Le Delas Tide workshop in Rungis on the day of dispatch for optimal freshness.

Dorado is extremely versatile in the kitchen. Its flesh holds up perfectly when cooked and is excellent grilled, à la plancha or cooked en papillote. It goes very well with exotic flavours, citrus sauces or fresh herbs. This fillet is ideal for daily specials, fish skewers, or à la carte menus.
Storage and preparation advice:
This product is available to order with a 48-hour lead time. It is recommended to store it in a cold room and consume it quickly once received. As the product is fresh, it can also be frozen upon receipt.
