Spiny lobster
Langoustine french origin calibre 04/06 ⚖
610046
The jewel of the French coast in an exceptional size.
This wild langoustine, caught in French waters and selected by Le Delas' Atelier Marée, embodies the excellence of the nation's maritime terroir. This ‘extra' 04/06 size denotes specimens of monumental proportions (only 4 to 6 per kilo), offering unrivalled grandeur for prestigious dining tables. Caught using rigorous fishing methods that guarantee optimal freshness, it is distinguished by its immaculately white flesh, a texture that is both meaty and of absolute finesse, as well as a lingering, sweet, sea-salt flavour.
Professional uses, preparation and storage:
► Culinary applications: A flagship product of haute cuisine, this giant langoustine stands on its own. It is ideal for roasting whole, showcasing its majestic form. Chefs often prepare it by searing it on one side on a griddle or gently poaching it in clarified butter to preserve its pearly sheen. Its size allows for complex textures, such as inserting truffle under the shell or finishing with a citrus glaze.
► Preparation: Given the density of the flesh in this size, controlling the core temperature is crucial: it must remain translucent to retain its creaminess. The heads and claws of these French specimens are particularly rich in roe and juices, providing a luxurious base for emulsified sauces, intense reductions or signature shellfish butters.
► Storage: An ultra-fresh seafood product that must be kept on ice in a refrigerated environment at between 0°C and +2°C. To honour its French origin and the exceptional quality of this crustacean, preparation on the day of receipt is strongly recommended.
