Professional uses, preparation and storage:
► Culinary applications: Langoustine tails are ideal for the most delicate preparations. They can be enjoyed simply seared on a griddle with a drizzle of extra virgin olive oil, quickly poached in an aromatic broth, or served as a tartare or carpaccio to highlight their natural freshness. They are also ideal for enhancing a seafood risotto, adding a touch of luxury to a warm shellfish salad, or serving as a premium garnish for a creamy bisque.
► Preparation: Product ready to be shelled or cooked as is. To preserve the delicacy of the flesh, it is essential to cook for very short periods (a few dozen seconds are often sufficient). The tail shells, rich in juices, provide an excellent base for making shellfish butters or intensely flavoured reduced sauces.
► Storage: Ultra-fresh seafood that must be stored on a bed of ice in a refrigerated environment, between 0°C and +2°C. Immediate use upon receipt is strongly recommended to ensure the product's texture and natural sweetness.
