► Culinary applications: Thanks to its size, this size is ideal for garnishing mixed platters, seafood risottos or gourmet shellfish salads. In the kitchen, these langoustines excel when simply seared on the griddle, fried in a light tempura batter, or incorporated into delicate fish casseroles. They also make an excellent choice for seafood platters, offering a refined dining experience with generous portions.
► Preparation: To preserve the pearly texture and sweetness of the product, very brief cooking is recommended. Paying close attention to the heat will prevent the flesh from shrinking. The shells, although smaller than those of larger sizes, remain a valuable source of flavour to enrich your stocks, shellfish butters or cooking juices.
► Storage: Fresh seafood must be stored on a bed of ice in a refrigerated room, between 0°C and +2°C. For optimal organoleptic quality, it is advisable to process the pieces quickly after receipt.
