A smoked salmon calibrated in small slices of 15 to 20g, salted with dry salt, smoked over beech wood, then machine sliced. Open the packaging 10 min before tasting.
Selected and freshly processed fish in th erespect of best practices, and a high quality requirement.
Guyader salmon and trout are prepared using traditional methods. Threaded fresh, they are salted with dry salt, washed, dried, then cold smoked with beechwood 5 to 8 hours. They are then matured about a day, depending on their size, their humidity level and their fat level. They are then sliced by hand by experienced slicers, or by machine, without cold treatment. Packed and shipped in tight flows, they guarantee freshness and traceability.
