Bred on the edge of the Aulne in white water, this trout, recognized for its exceptional quality, is sublimated by a gentle smoking with beech wood.
Selected and freshly processed fish in th erespect of best practices, and a high quality requirement.
Guyader salmon and trout are prepared using traditional methods. Threaded fresh, they are salted with dry salt, washed, dried, then cold smoked with beechwood 5 to 8 hours. They are then matured about a day, depending on their size, their humidity level and their fat level. They are then sliced by hand by experienced slicers, or by machine, without cold treatment. Packed and shipped in tight flows, they guarantee freshness and traceability.
