Kijoshu is a sake produced by replacing some of the water used during its production with sake, which makes it more syrupy. Nigori describes a cloudy-looking sake, coarsely filtered, and containing fine particles of cooked rice. Sake Kiyomori Heian has a strong taste of rice, a sweet flavor and an excellent length in mouth. It is drunk very fresh, ideally for aperitif or dessert.

It is not a distilled alcohol, contrary to popular belief, and averages 15.5% alcohol. Similar to wines in France, the general trend in the sake market is to a reduction of volumes and an increase quality. No matter what everyone says, it is your palate who will decide which of these sakes you prefer.
