Goose and duck rillettes

This traditional 70% goose recipe is cooked in old cast-iron pots (and not in huge pressure cooker). The rillettes are dipped manually with a ladle, which preserves the fibers of the meat and avoids the inevitable mixing by the industrial mechanical processes.
Located in the french Sarthe, where rillettes are a regional specilaty, Ruel is a human scale company, preserving the flavor of its products by the use of traditional and manual methods.
The Ruel company, although very modern, works only in the respect to traditional methods. The pork used in it's production is exclusively French (LPF) and all its raw materials are carefully selected to guarantee finished products with irreproachable flavors and textures. Its famous rillettes are cooked in cast iron pots and hand-dipped. They are regularly awarded : National Competition of Best Ramses of Mamers in 2008, 2009, 2010, 2011 and 2014, Competition General Agricultural of Paris in 2015 and 2016.
