Our Valençay AOP Verneuil cheese is made from local raw and whole milk. Once unmoulded, it is salted and ashed with charcoal. Its delicious soft texture, with a light gray to bluish gray rind, contains 22% fat. Its paste is fine and unctuous and can be tasted from the 11th day fresh. For longer, the latter becomes slightly brittle.
Did you know ? The story goes that Valençay cheese was originally a pyramid-shaped cheese. When Talleyrand, residing at the Château de Valençay, wanted to offer some to Napoleon, he had the pointed top cut off so as not to remind him of his defeat in Egypt. Hence its current truncated pyramid shape. Historically made in Berry, the Pyramid of Valençay is produced in an area which extends mainly over the department of Indre and some municipalities of the bordering departments of Cher, Indre-et-Loire and Loir-et-Cher.
