Produced from goat's milk, raw and whole, this small round cheese dates back to the end of the 19th century. Hand molded, it is ashed with a mixture of charcoal and salt, then matured for about 10 days. Its crust is then adorned with bluish moulds. On the palate, it reveals well-developed goat aromas, linked to the quality of the hay from the Cher Valley consumed by the goats. Location in store: Atelier BOF
