This Mothais, raw goat's milk cheese, is wrapped in a chestnut leaf to develop its aromas. The sheet absorbs moisture from the cheese and gives it a softer, creamier paste and a thinner crust.
Local raw milk cheeses, without GMOs, molded with a ladle, made by a traditional dairy, belonging to the same cooperative as Échiré.
Like Échiré, the Sèvre & Belle brand is part of the Coopérative Laitière de la Sèvre, an independent dairy cooperative on a human scale and respectful of the know-how of yesteryear. The quality of their products is directly linked to the respect of ancestral manufacturing processes, which they have been practicing since 1893. The production, certified IFS higher level, is based on 55 goat milk producers. Their local milk is guaranteed GMO-free and comes from a radius of 50 km around the dairy.
