The traditional Iberian rack is also known as "Iberian French Rack", because it comes from French know-how. This elegant piece is particularly suitable for oven preparations. Its meat is eaten pink, to cook it successfully, it is important to cook several ribs at the same time. Its taste is very fine and its melting flesh is more reminiscent of veal meat than that of pork.
Acorn-fed Iberian pork raised in Salamanque
Commonly called "Pata Negra", the Iberian pork is one of the best pigs in the world. The Black Nature pork is raised extensively in Salamanca, completely free in a wooded ecosystem called dehesa. He feeds there naturally on acorns (bellota), from oak trees displaying the dehesa, during the most important phase of his fattening, that is to say in autumn/winter, with a complement of cereals. This traditional farming method allows a slow accumulation of fat under the pork's skin and between the muscle fibres. Its meat is marbled and extremely tender and tasty. Its unsaturated fatty acids have a unique nutty flavor.
