Blended in France from carefully selected ingredients (coriander, cumin, turmeric, fenugreek, ginger), this massalé has been chosen by Le Delas for its consistent grind and perfect balance, offering a ready-to-use seasoning base for professionals seeking authentic flavours.
Culinary applications, preparation and storage:
► Culinary uses: Although traditionally associated with massalé-style kid or chicken, this blend also excels at flavouring grilled lamb, legume stews (lentils, chickpeas) or vegetable curries. Its rich composition brings a warm, mellow depth without being overly spicy.
► Technical benefits: Its ground form allows for the instant release of aromas into dishes. The presence of turmeric ensures a beautiful natural colour in dishes, whilst cumin and fenugreek add structure to the sauce with their characteristic earthy and spicy notes.
► Use: To release the full power of the essential oils, it is recommended to lightly roast the mixture dry or in a fat at the start of cooking (the ‘blooming' technique). It can also be used as a dry rub for cuts of meat intended for grilling.
► Storage: Packaged in a 500g bag for intensive use, it should be stored in its original, tightly sealed packaging, in a cool, dry place away from light. To preserve the integrity of its aromatic notes, it is advisable to use it within 12 months of opening.
