Grown at an altitude of between 700 and 1,200 metres, these lavandin flowers are harvested by hand in the height of summer, between July and August, before being air-dried. Delas has selected this flower for its particularly distinctive and intense fragrance. It is a distinctive ingredient that allows chefs to add a floral note and a unique Provençal elegance to creations ranging from starters to desserts.
