These extra-large Burgundy snails from the Helix pomatia species are an authentic delicacy, renowned for their tender, flavorful meat a true expression of the Burgundy terroir.
Prepared using strict artisanal methods, they are cooked in a flavored court-bouillon, which preserves their delicate taste and characteristically tender texture.
Packaged in a professional format of 96 pieces, calibrated as “extra large” (4/4), these snails have been carefully selected by Le Delas.

Burgundy snails cooked in an excellent 100% natural court-bouillon, which you can use in your recipes.
Prepared in an excellent natural court-bouillon, these shelled snails (Helix Pomatia) are ready to use, without rinsing. They can be used to garnish shells, in a gratin, in casserole dishes or even on skewers, depending on the inspiration of the Chefs. Their flesh with a delicate taste can be adapted to all recipes. Their extra flavor comes from the use of a 100% natural broth by infusing a bag of bay leaves, thyme, bird's eye pepper, cloves in salted water. Your snails will have been bathed in a fragrant broth. So you don't need to rinse your snails and you can use the broth, for example to make your sauce bases.
