These large Burgundy snails from Spiralée embody French gastronomic tradition. Belonging to the Helix pomatia species, these Burgundy snails have tender, delicate flesh, the hallmark of a quality product. Prepared using tried and tested traditional methods, they are cooked in an aromatic court-bouillon broth that fully preserves their subtle flavours and characteristic tender texture. Prepared in an excellent natural court-bouillon, these shelled snails (Helix Pomatia) are ready to use, without rinsing. They can be used to garnish shells, in a gratin, in casserole dishes or even on skewers, depending on the inspiration of the Chefs. Their flesh with a delicate taste can be adapted to all recipes. Their extra flavor comes from the use of a 100% natural broth by infusing a bag of bay leaves, thyme, bird's eye pepper, cloves in salted water. Your snails will have been bathed in a fragrant broth. So you don't need to rinse your snails and you can use the broth, for example to make your sauce bases.
