A limited series of sardines with organic olive oil first pressed, prepared the old way. It honours the historical know-how of the cannery and the creative work of contemporary artists in the region, making their boxes into real collectibles. Worked fresh, the fishing grounds are the ports of Lorient, Concarneau, Douarnenez, Saint-Guénolé in Brittany, and sometimes Saint-Gilles-Croix-de-Vie in the Vendée. When ripe, they are more fleshy and so mellow and tasty. They are trimmed and nested manually. Cooked the old way, they are fried in oil, which allows them to confide once in the box and improve over time. Very popular with sardine lovers, their cooking mode allows to age better in their box.
