Don Bocarte uses only fresh (non-frozen) Skipjack tuna fished from the gulf of Gascoigne. The mid-to large-sized Skipjacks are prepared with a delicate seasoning, and gently cooked using a meticulous process for a distinctive, juicy and delicate finished product.

Since 1997, Don Bocarte has been producing exclusively hand-prepared, premium-quality culinary items in limited batches using exclusive production methods. The company uses only the finest tuna, anchovies, octopus and squid, exclusively fished in the Gulf of Gascogne in Northern Spain. Our anchovy filets, for example, are prepared using only fish caught between March and June, when the anchovies carry the most fat and are at their most flavourful. The fish are then prepared using a traditional artisanal process to preserve all their moisture and flavour.See all products in this range
