Almond milk or orgeat syrup. Recipe without flavorings or colorings, prepared from a puree of almonds, some of which bring this characteristic bitter flavor. Shake vigorously before using to flavor sorbet, blancmange, crème brûlée, crème anglaise, pastry cream, fruit puree, cocktails‚ based on rum or anise ("Mauresque"), kirsch... Orgeat is its denomination when it is used in drinks. Indicative dosage: use diluted with 10 to 40% liquid.
