Available in a fine grain size (0.63 to 1 mm) or medium grain size (1 to 2 mm), it stands out for its beautiful amber-yellow colour and perfectly uniform grains. Once moistened, it offers an airy texture, a soft mouthfeel and a distinct flavour of durum wheat, guaranteeing an impeccable visual and gustatory result on your menus. Professional uses, preparation and storage: ► Culinary applications and presentation: > Classic accompaniment: The essential base for traditional couscous (royal, lamb, poultry, fish or vegetarian), tagines and slow-cooked dishes in sauce. > Starters and buffets: Ideal for making Middle Eastern tabbouleh, mixed cold salads, vegetable fillings (courgette, peppers) or gratins. ► Preparation tips (water-to-semolina ratio: 1:1): > Traditional method (couscous pot): Moisten the semolina with an equal amount of salted water, mix and leave to stand for a few minutes. Fluff up the grains, place in the couscous pot and cook for 10 minutes from when steam begins to rise. > Quick method (microwave): Moisten with an equal volume of salted water, grease the bowl lightly and mix. Cover with cling film and heat for 3 minutes in the microwave.
