Chestnut pieces vacuum-cooked 1kg PONTHIER
120658
These chestnut pieces are produced using a traditional process: the chestnuts are shelled over a flame, then vacuum-cooked using Ponthier's expertise, ensuring a soft, delicious flesh with natural, slightly sweet and roasted notes. 100% natural and additive-free, they retain all the flavour, melt-in-the-mouth texture and nutritional quality of the fruit, while offering a very practical ingredient for professional kitchens.
Ready to use, they can be reheated in a few minutes or used cold, depending on your needs. Their broken format makes them easy to incorporate into a wide variety of savoury or sweet preparations, ensuring consistency and texture.
Culinary uses:
► Savoury dishes: traditional accompaniment to meat and poultry, stuffings, veloutés or gratins.
► Salads and gourmet compositions: combine with pine nuts, walnuts, dried duck breast or gizzards.
► Desserts and pastries: add to creams, mousses, cakes or brioches for an authentic and delicate flavour.
Storage and transport: store at room temperature.

Tasty, healthy and responsible fruit coulis and purées for gastronomy!
This family-run business, which has specialised in fruit since 1946, embodies above all a commitment to the authentic flavour of fruit through its chilled purées and coulis. It sources exceptional, rare and exclusive fruits, picked at peak ripeness and gently processed shortly after harvesting. It supports the gastronomic community with its creations and innovations. Certified B Corp, one of the most stringent social and environmental labels, Ponthier will switch to using French-sourced beet sugar in June 2024 to reduce its carbon footprint. Ponthier coulis and purées are made from fruit sourced from carefully selected varieties, harvested according to their stage of ripeness, with no colourings or preservatives. Both fresh and frozen purées are used in desserts, ice creams or sorbets, jams, fruit jellies, coulis, glazes, as well as in cocktails, smoothies, milkshakes and slushies... The coulis, whether fresh or frozen, can be used to decorate plates, alongside cakes, on ice cream, mixed with yoghurt, or in fruit salads. These fruit bases are ideal for cooking, laboratory work and, of course, baking. Their resealable packaging allows for easy portioning and optimal protection against bacteria.
